a tutorial

Around here at the Busy Bee Lauren, your wish is my command.
You ask, you shall receive.
That is why I am giving a tutorial on how to make my Honey-Lime Enchiladas.
For the record, I adapted my recipe from this one.


1. Find an apron.
Things are gonna get dirty up in here. *snicker snicker*

2. Find a dashing helper.
I just happened to have Pocket Edward volunteer to lend a hand...because, did you hear? He lives at my place now. Yeeeeah dawg.

3. This step only applies to me.
Put Wee Edward in your pocket...for safe keeping.
See him gesturing like that? He was telling a wickedly witty joke. Oh, that Pocket Edward...

4. Assemble all of the ingredients.
2-3 boneless skinless chicken breasts (can be frozen)
1-2 14oz cans of green enchilada sauce
2 cups cheese (I use mexican blend)
8-10 flour or wheat tortillas
1/2 cup sour cream
4-5 cloves garlic
1/2 onion
3 TBLS. honey
5 TBLS. lime juice
1 TBLS. chili powder
2 TBLS. "hot shot" (red and black pepper)
2 tsps. cayenne pepper

5. Turn stove onto medium-high
That's a good job Edward.

6. Place your chicken breasts in pot, and fill with water until just covering. Bring to a boil and cook for 10-15 minutes.
No, Edward is NOT praying to the chicken.

7. Peel and garlic and smash with the back of a knife.

8. Mince until it looks awesome.
Mine is awesome.
It should look awesome like mine.
Because it is awesome.
Like mine.

9. Mince onion
And try not to get teary eyed.
That sucks.

10. Pour a bit of olive oil into a skillet...

11. Heat to medium-high temp and then saute the onion, and garlic.
Watch it, Edward! I don't want you to melt. That would be sad.

12. Whisk together the lime juice and honey. Add the chili powder. Turn the heat down on the stove and add the mixture.

13. I use my hand to measure the dry ingredients. Hand measurements always work like a charm. Unless you have a Wee Edward hand. Then you would want to do 10 times the amount.

14. Take the chicken out of the pot, trim all fat, unless you like fat (but that would be sick...you are dismissed), and cube into small little uniform pieces.

15. Have you assistant add the chicken to the saute pan, and stir until just heated through.

16. Open up one can of sauce...
Here Edward is, warning me to be safe around sharp objects such as can openers. Someone spends too much time around clumsy lame people *cough*Bella*cough*

17. Pour just enough sauce to cover the bottom of a 9X13 pan.
Pocket Edward: "Yes, looks quite satisfactory indeed."

18. Spread about half a tablespoon of cream cheese
onto a tortilla.

19. Place about a 1/4 cup of chicken on top
of the cream cheese...

20. "Hey Edward, can you grab me an arm full (1/4 cup) of cheese to sprinkle on top?"

21. "Thanks Pocket Edward, you are a doll (pun intended). Now can you roll up the burrito and put it into the pan?"
Is it just me, or did they do a magnificent job with his highlights?

22. After all of the burritos are rolled, take another can of the sauce and mix with a 1/2 cup of sour cream.
I let Edward observe as I demonstrated the technique of whisking...

Then I let him have a try...

23. Pour on top of the burritos.

24. Sprinkle remaining cheese on top, and bake uncovered in a 350 degree oven for 20 minutes.

25. Edward rejoices at the finished product!

Now, I know that Edward eating human food goes against all things vampire cannon, however, he insisted on tasting the final product. Because he is champ. And, Edward Freakin' Cullen. And he is attractive for a 4 inch tall, plastic thing that smells like the paint on it
may cause it to be recalled.
