That is why I am giving a tutorial on how to make my Honey-Lime Enchiladas.
For the record, I adapted my recipe from this one.
1. Find an apron.

2. Find a dashing helper.I just happened to have Pocket Edward volunteer to lend a hand...because, did you hear? He lives at my place now. Yeeeeah dawg.

3. This step only applies to me.
Put Wee Edward in your pocket...for safe keeping.

4. Assemble all of the ingredients.
2-3 boneless skinless chicken breasts (can be frozen)
1-2 14oz cans of green enchilada sauce
2 cups cheese (I use mexican blend)
8-10 flour or wheat tortillas
1/2 cup sour cream
4-5 cloves garlic
1/2 onion
3 TBLS. honey
5 TBLS. lime juice
1 TBLS. chili powder
2 TBLS. "hot shot" (red and black pepper)
2 tsps. cayenne pepper

6. Place your chicken breasts in pot, and fill with water until just covering. Bring to a boil and cook for 10-15 minutes.
No, Edward is NOT praying to the chicken.

8. Mince until it looks awesome.
Mine is awesome.
It should look awesome like mine.
Because it is awesome.
Like mine.

11. Heat to medium-high temp and then saute the onion, and garlic.
Watch it, Edward! I don't want you to melt. That would be sad.

12. Whisk together the lime juice and honey. Add the chili powder. Turn the heat down on the stove and add the mixture.

13. I use my hand to measure the dry ingredients. Hand measurements always work like a charm. Unless you have a Wee Edward hand. Then you would want to do 10 times the amount.

14. Take the chicken out of the pot, trim all fat, unless you like fat (but that would be sick...you are dismissed), and cube into small little uniform pieces.

16. Open up one can of sauce...
Here Edward is, warning me to be safe around sharp objects such as can openers. Someone spends too much time around clumsy lame people *cough*Bella*cough*
17. Pour just enough sauce to cover the bottom of a 9X13 pan.Pocket Edward: "Yes, looks quite satisfactory indeed."

21. "Thanks Pocket Edward, you are a doll (pun intended). Now can you roll up the burrito and put it into the pan?"
Is it just me, or did they do a magnificent job with his highlights?

22. After all of the burritos are rolled, take another can of the sauce and mix with a 1/2 cup of sour cream.
I let Edward observe as I demonstrated the technique of whisking...

25. Edward rejoices at the finished product!

Now, I know that Edward eating human food goes against all things vampire cannon, however, he insisted on tasting the final product. Because he is champ. And, Edward Freakin' Cullen. And he is attractive for a 4 inch tall, plastic thing that smells like the paint on it
may cause it to be recalled.

I'm a little bit dissappointed to see that Edward can't change his clothes.
I think he needs a little chef's hat for helping in the kitchen, only that would cover up his highlights (they did do a pretty good job there!)
Oh my gosh, I am dying. It was like Where's Waldo? only with super-hot vampire doll. I couldn't wait to see how he'd pop up in each picture. My only problem--how can I possibly make these delicious enchiladas without my very own Pocket Edward? I must go purchase one now...

After seeing how popular this was, I decided to go and get highlights in my hair just like Pocket Edward.
OK - that enchilada craving has become an obsession. I cannot stop thinking of melted cheese and enchilada sauce and all the yum going into my gut. And I just had a significant weight loss and I know enchiladas are going to ruin it, and I still cannot stop myself.
